Delicious Dinner

I am all about easy, delicious dinners!  Last night Josh and I had gone to none other than Trader Joe's and picked up a few things to get us through the weekend.  

We decided to make chibatta bread sausage sandwiches...which accidently turned into open faced sandwiches.


First we sautéed mushrooms and onions in white wine...man did that smell good!


After the sautéing was completed, we chopped, seasoned, and grilled up some zucchini that we had purchased at the farmer's market.  



As Josh was grilling the  zucchini, I cut up the chibatta bread, spread garlic dip on it, and placed the chicken sausages on the bread.


Then it was time to cover it in the mushroom and onion mixture and mozzarella cheese.


Top with bread and place in broiler.


I had planned to have the sandwiches in the oven for about 7 minutes, as the sausage recommended cooking it for about that long, but that didn't work out so well.  After about 5 minutes smoke started to rise out of the oven...the tops were burning big time!


I quickly removed them and replaced the rest of the sandwiches back in the oven for the remainder of the time.  The funny thing was that after the smoke and commotion, Josh and I both looked at each other and said we had both thought that we should place the top of the sandwiches on half way through the broiling process, but neither of us spoke up.  Oh well!

We ended up with open face sandwiches...which were probably a better option as there might have been too much bread otherwise.  Who knows?


All that I do know is that it was quite tasty!
