Peach Sorbetto

I love a delicious frozen treat-especially in the summer!  I do love ice cream, but I don't like how unhealthy it is.  Therefore I decided to try to make some sorbetto.  Sorbetto is an Italian sorbet made out of essentially fruit and simply syrup.  Not exactly health food, but much healthier!

Josh and I had been talking about making some and then we got over to the house we are housesitting at and they have a peach and lemon tree in the backyard and so we decided to make peach sorbetto as the three ingredients are peaches, lemon, and simple syrup...check, check, and check!

Now brace yourself as I am about to show you how to make this incredible summer treat!

First things first: pick about 5 and a half pounds of peaches (while avoiding being stung by one of the many bees) and a lemon.  Wash them and prep them to be blanched.  Prepping includes, washing and cutting a small X on the bottom of each peach.


Meanwhile fill a pot with water and wait for it to boil.  As you wait for that boiling water, make the simple syrup by combining a cup of water and a cup of sugar in a small sauce pan.  Whisk together until the sugar disintegrates completely, creating simple syrup.


Once the water in the pot is boiling, put the prepped peaches in the boiling water for one minute.


After a minute remove them from boiling water with a slotted spoon to place into a ice water bath.  After another minute remove from ice water bath.


Now the peaches are ready to work with.  You simply peal and remove the pits from the peaches.  The peaches are ready to be pealed once removed from the ice water.  The X that was cut into them at the beginning of the process makes the pealing process easy.


With the peaches pealed and pitted, they are ready to be blended together with a few teaspoons of lemon juice.  Once the mixture has been pureed, pour through a strainer into a container to remove any remaining chunks.


Then place both the simple syrup and peach mixture into the refrigerator for at least an hour to chill.


Once the two have chilled for a sufficient amount of time, combine the two together using a whisk.


Then pour the mixture into your ice cream machine and churn for 15 minutes until sorbetto has thickened and is ready.


Once your sorbetto is ready, put in freezer or begin to enjoy immediately.  I'd recommend letting it sit in the freezer for a little while as to thicken a little as it may melt quickly without being in the freezer for some time.  I'd also recommend enjoying it the next evening with 20 high schoolers over a game of Catch Phrase!  That way you get to share and enjoy it together in community after a long night of VBS!

  2. Fab - I have a friend who is lactose intolerant so findign really nice desserts is not always easy when he comes for dinner, I know he loves peaches so this will be a good suprise next time he visits, thanks for the recipe
