The "Brookie" Bowl

What's a "brookie bowl" you may ask?  Only the most fabulous newly invented dessert!

I combined the form of a cupcake, a brownie, and a cookie to create the brownie cookie bowl...most popularly known as the fabulous brookie bowl!  Top with a scoop of vanilla ice cream and this warm tasty treat comes to life. 


This dessert is inventive and scrumptious as it combines all of your favorite dessert elements.  And what's more, it is an easy bake.  Here's how:

First you prepare your favorite brownie batter.  I like to use a simple homemade recipe:
          • For the Brownie Batter:
          • 1/2 cup vegetable oil
          • 1 cup white sugar
          • 1 teaspoon vanilla extract
          • 2 large eggs
          • 1/2 cup all-purpose flour
          • 1/3 cup unsweetened Ghirardelli cocoa powder
          • 1/4 teaspoon baking powder
          • 1/4 teaspoon salt

  • Combine the first 4 ingredients in a large bowl.  In a medium size bowl combine the remaining three ingredients.  Slowly stir in the contents of the second bowl into the large bowl until the mixture is completely mixed in.

Pour the brownie batter into cupcake liners, filling half of each liner.  I used free standing cupcake liners on a baking sheet, but you can certainly use a muffin pan if you'd like.



Next I placed Pillsbury Simple Chocolate Chip Cookie Dough in the middle of each cup.  You certainly may make a homemade batch of cookie dough, but for time's sake I decided to only make one of the elements from scratch.


Place in the oven for 12 minutes at 350 degrees.  When the "Brookie" Bowl is first removed from the oven, the cookie will have risen to the height of the brownie.


As the "Brookies" cool, the weight of the cookie will cause the cookie to fall which creates the bowl effect.


Once the "Brookie" Bowls have cooled to a warm center, greet with a scoop of ice cream and some carmel and enjoy!


Since the "Brookie" Bowl is meant to be enjoyed while warm, the re-heating instructions are simple: 
Preheat oven to 350 degrees
Place in oven for 1-2 minutes
Prep with ice cream and enjoy!
