A simple, healthy meal becomes an instant favorite in my home. Today Josh and I made a squash pasta in a matter of minutes!
Here's the scoop:
Use a potato peeler to make thick noodles out of a fresh squash-think fettuccine. Mix them into a bowl. Season with olive oil and a pinch of salt. This mixture simulates cooking the "noodles." On the stove heat up pasta sauce. Pour the warm sauce over the noodles, greet with Parmesan cheese, and enjoy!
*note: one squash per person allows for a meal size serving
So you leave the squash raw and never heat the "noodles"?
